- Ve svém příspěvku se zamýšlím nad úlohou kapra (Cyprinus carpio L.) v současném českém kulturním prostředí. Rozebírám tradiční přístup a konfrontuji jej s vědeckými poznatky. Snažím se kapra zařadit do terminologie nově definovaných přístupů a vědeckých disciplín. Dotýkám se invazní biologie, akvakultury a managementu vodních ekosystémů. Poukazuji na akvakultuře založené rybářství (culture based fisheries), které management kapra ve volných vodách v Česku charakterizuje. Nastoluji otázky k řešení a hledám nový jasnější přístup odborné komunity ke kaprovi.
Kapr je silně spjatý s českým kulturním prostředím a přírodou v Česku, ale neměli bychom zastírat, že se jedná o domestikovaný druh, který nelze považovat za původní element vodních ekosystémů. - LOŠŤÁK, Michal: Tradition in regional dimension (the case of fish tradition in Czechia). - The paper explores traditions as regionally constructed. It shows what is considered as the tradition in term of fishing in Czechia in regional dimension. The findings are important for regional or rural development. As such traditions are jiond with development. The research used questionnaire survey distributed among representative quota sample of the Czech population (n=1006 respondents). The quantitative data were underpinned by the findings from interviews with crucial stakeholders in fishing sector. The data suggest the main tradition in term of fishing in Czechia is Christmas carp. However, there is not equal understanding of this tradition among the NUTS3 regions in Czechia. Although the difference is not statistically significant, 90 % of respondents in NUTS3 regions of Pardubický kraj, Hradecký kraj, Praha and Jihočeský kraj highlighted this tradition as strong or very strong, while in the case of Ústecky kraj it was only about 60 % of respondents who considered Christmas carp as a tradition. These polarization reflect regional inequalities. The research findings, however, also indicate that the preservation of the Christmas carp as being the tradition is not easy (e.g. processing the carp for the dish is time demanding and difficult compared convenient fish food). Also this aspect has its regional dimension and ehoces regional differentiations. - The popularity of farmers' markets in recent years is increasing. For small farmers, who are currently under the pressure of multinational food companies, farmers' markets are a socalled Short Supply Chain, which allows for the sale of goods without a middleman. Although the fish consumption increased by 6.3 percent to 5.4 kg per person, it is only a seasonal increase, which is due to the tradition of buying carp on Christmas. Farmers' markets provide direct contact with the customer and allow for sales outside the Christmas holidays. As indicated by previous research, farmers' markets are places where there is direct contact with the customer and the seller gains the ability to communicate and to capture changing customer preferences in purchase behaviour. - Modern ornamental fishkeeping is one of the most popular hobbies in the world, with various known positive and also negative aspects including the introduction of non-native species. Despite this fact, the history of the first imports of freshwater tropical fish species for ornamental purposes has never been deeply studied and is usually simplified. Here, we present the first comprehensive review of reported imports in the period of the early history of this sector of aquaculture, ending with the end of the First World War. Moreover, the total number of kept species has been updated, with a forecast for the future. We present the summarised information in a wide context of both historical and current connections and viewpoints, highlighting the crucial role of German importers at this time. - We provide a general overview of spatial distribution and the economic situation of aquaculture enterprises in Czechia (the Czech Republic) in terms of revenues, profitability, work productivity, indebtedness and grants. We analysed data available in the State Veterinary Administration and information system of the State Agricultural Intervention Fund. The most significant fish producers (enterprises) are located in the regions of South Bohemia. Aquaculture sector profitability and enterprises profits have been moderately rising since 2010. The profitability in 2015 is roughly the same as that in 2005. The amount of provided grants showed a higher value than the generated average annual profits. The enterprises were not able to generate sufficient resources to finance investments without grants resources. Enterprises that realised financing for larger investments from bank credits showed relatively high levels of indebtedness (micro-enterprises at 95.5%). On the contrary, work productivity was the highest for micro-enterprises. Micro-enterprises had the largest share of revenues in relation to the number of employees. - This article explores attitudes of hospitality stakeholders (HSs) and consumers towards fish gastronomy in the Czech Republic with an emphasis on traditional recipes and the impact of globalization. For the exploration of HSs’ attitudes, qualitative investigation via in-depth semi-standardized interviews was employed with 19 fish restaurant HSs. The abstraction, appearance of ideal types of HSs, and integration with four aspects of Ritzeri’s McDonaldization theory were done. For the exploration of consumers’ attitudes, sensory evaluation of seven fish dishes with 1698 participants was used. Lastly, a focus group was conducted with regular fish food consumers. Three ideal types of HS named progressive innovators, taste defenders, and occasional traditionalists appeared. For all of them, aspects of McDonaldization were obvious, meaning shift towards rationalization in Czech fish culinary culture and possible dilution of the original identity. As the main reasons for deauthentication of Czech fish gastronomy, a high laboriousness of traditional fish dishes causing high time consumption for restaurant staff, and the inclusion of bones in most of the traditional Czech fish dishes as the main barrier for consumers were identified. Paradoxically, consumers preferred traditional dishes more, showing a discrepancy between the attitudes of consumers and HSs. This result drew attention to the need for marketing research on the part of HSs. When already prepared dishes were presented, consumers preferred to choose more time-consuming fish dishes with more input ingredients. In the restaurant, consumers more often choose bone-free dishes. On the other hand, in households, consumers prefer the cheaper purchase of whole fish with bones. Ways of defense against food globalization were outlined: promotion of traditional fish dishes not contradicting the McDonaldization aspects, supporting food with strong national traditions, and the usage of glocalization when the skills, specificity, or original ingredients are sustained despite globalization.
